Place the oats into a mixing bowl with the raisins and/or sultanas and cover with the Apple juice. Cover and place in the fridge overnight.
In the morning core the apples and grate coarsely. Fold the grated apples, yoghurt and honey, if using, into the oat mixture.
Spoon into serving dishes and top with toasted flaked almonds and/or coconut shavings and fresh blueberries.
