Asian Sticky BBQ Marinade

Ingredients

  • 500ml Ceres Whispers of Summer
  • 100ml BBQ sauce
  • 30ml soy sauce
  • 10ml fresh ginger, finely grated
  • 1 small red chilli, deseeded and chopped
  • 30ml fresh coriander, finely chopped
  • 15ml black and/or white sesame seeds, lightly toasted

Place the Whispers of Summer juice into a pan and bring to the boil. Reduce the heat to simmer and cook, uncovered until the mixture is reduced by half.

Turn off the heat and stir in the BBQ sauce, soy sauce, ginger, chilli, coriander and sesame seeds. Allow the marinade to cool.

Preheat an oven to grill or prepare a ready-to-cook braai. Baste the ribs with the marinade and some sesame seeds. Cook for 10-12 minutes, basting frequently, until the ribs are hot, sticky and well glazed. Serve topped with some spring onions and extra chilli, if desired.

To Serve

2 racks pre-cooked pork, lamb or beef ribs

30ml black and/or white sesame seeds, lightly toasted

2 spring onions, sliced

1 red chilli, sliced (optional)
