Place the Full Moon Harvest juice into a pan and bring to the boil. Reduce the heat to simmer and cook, uncovered until the mixture is reduced by half.
Whisk in the ginger, peanut butter, soy sauce and sesame oil, simmer for 3 minutes. Turn off the heat and set aside.
To serve, heat some oil in a wide pan or wok and stir fry the chicken pieces for 4-5 minutes.
Add the vegetables and fry for 3-4 minutes. Add some of the sweet & tangy stir fry sauce, according to taste and cook for 1 minute.
Serve the stir fry with rice or noodles, if desired.
